Apple goodness and sweet brown sugar make these muffins delicious. But you know what made them even better? A friend stopped by to share them with me!
Good conversation, a cup of tea and muffins warm from the oven can make a plain old Wednesday morning the best part of the week.
Muffins are about the perfect snack food. They are such a quick way to have the comfort of homemade baking. Here’s what you’ll need:
- 2 cups flour
- 1/2 tsp. salt
- 1 Tbs. baking powder
- 1 tsp. cinnamon
- 1 stick butter
- 1 cup brown sugar
- 2 eggs
- 3/4 cups milk
- 1 tsp. vanilla
- 1 cup diced apples (I used 2 small apples and had a bit leftover to munch)
Stir together dry ingredients with a spoon. In a separate bowl, mix the butter and sugar with an electric mixer. Add in the eggs, milk and vanilla, mixing until it looks caramely and smooth.
Pour the wet ingredients into the dry ingredients and fold together, stirring only until combined. Gently stir in the apples.
Divide into greased muffin cups. Bake at 400 degrees for 15-20 minutes. Makes 12 muffins.

I love to do muffins for breakfast or snack but no one else in my house really cares for them. I do more quick breads (blueberry, banana, etc) since at least hubby will eat that. So far G won’t eat either, even if I call a muffin a cupcake and frost it. Wish he would because that would be a quick breakfast on school days.

These sounds great! I make muffins a lot and keep them in the freezer. They thaw in about 30 minutes and make a perfect breakfast or snack!

I make muffins at least once a month. I’ll probably end up making them two times a month now that were getting closer to the cooler seasons. I know my kids love them for breakfast in the morning 🙂
Thanks for posting this recipe. I made an oatmeal apple muffin batch on Tuesday and they turned out awful 🙁 It was one of those flourless recipes. Not something I’ll likely make again.

I will make these for breakfast tomorrow. Since I don’t have apples on hand, I think I’ll try replacing apples with some of the zucchini I have from my garden. I’ll let you know how they turn out. =-)

I made these for my family and they were a huge hit…it’s three days later and I’m making them again! Had a girl friend over to have some and she was impressed as well. I thought they were a little plain, so I put a glaze on them…just some powdered sugar, milk, and vanilla extract. Mmm…

You may need to adjust the other liquid in the recipe if you use apple sauce, but it should work.
