Baked thin pork chops make this sheet pan dinner quick and tasty!

I really like using these boneless baked thin pork chops for this recipe.  They’re relatively inexpensive (groceries are getting crazy high in price!), they’re versatile and easy to use.  I need to do a post with lots of different ways to cook with these chops.

I’ve made this sheet pan dinner several times now.  It’s easy and it cooks in just about 30 minutes or a bit less.

To keep the prep quick, I used very small potatoes that didn’t require any chopping.  The green beans took longer to prep.  Brussels sprouts would work well and might be quicker.  Or try slices of cabbage.

One benefit of these baked thin pork chops is that they cook in the same amount of time the vegetables need. With a thicker cut of meat, you would need to put the meat in first and then add the veggies to the pan later.  This way it all goes in at the same time.

The beauty of a sheet pan dinner

I have a really big sheet pan that I bought at Walmart.  I love it because it fits a whole meal for a family.  My sheet pan is similar to this one.  If you don’t have a large pan, use two regular sized ones.

Here’s what you’ll need to make this meal.  Keep in mind that the veggies and seasonings can be swapped for other things.

This time I used McCormick’s Smokehouse Maple seasoning on the chops.  I love this stuff!  We flew through the first container of it and when I saw it in the store, I grabbed another.

I kept the seasoning on the veggies simple with kosher salt and black pepper.  Sometimes I like to sprinkle McCormick’s Montreal Steak seasoning over everything though.  That’s another favorite for my family.

Boneless Pork Chops and Veggies Sheet Pan Dinner

  • olive oil
  • 3-4 cups small potatoes or chopped potatoes
  • 3-4 cups green beans (trimmed and cleaned)
  • kosher salt
  • black pepper
  • 2 lbs. boneless thin cut pork chops
  • Smokehouse Maple seasoning or other seasoning blend
  1. Brush one large or two small rimmed baking sheets with olive oil.
  2. Toss potatoes with a drizzle of olive oil, salt and pepper. Add them to a section of the pan.
  3. Toss green beans with a drizzle of olive oil, salt and pepper. Add them to a section of the pan.
  4. Brush pork chops with olive oil and place in the remaining space on the pan. Sprinkle chops with seasoning.
  5. Place pan in a 425 degree oven for 25-30 minutes until meat is cooked through and potatoes are tender.

      1. My chops came out great, but the potatoes and veggies were not cooked. SOOO, I’m cooking my potatoes, onion, etc first and then the chop.

    1. My pork chops (thin sliced) were done after 10 min at 425F in my oven. Veggies needed the 25 min tho. Glad I kept an eye on them.

      1. Glad you were watching them. The thickness of the chops and the way each oven cooks definitely influence cook times and temps!

      2. I’ve baked thin ones before as well and not even at that temp and were done in 10 mins. Any longer they would’ve dried out

  1. Even cheaper is to buy a whole pork loin and cut it up yourself! Much cheaper! In SC and NY I’ve gotten them for $1.99 a lb. so much cheaper! You can cut a roast, a few thick chops, and a bunch of thin chops! I even make sausage out of a portion of mine so I can control the fat! Delicious!

        1. Yes, you can, Mary! It would be best to go with flattened chicken breasts or thighs, or even frozen chicken tenderloins and you’ll want to keep a closer eye on the cooking time, even shortening it a bit until you find the right time.

  2. Made this tonight for my family. They LOVED it and it was super easy! Will definitely be adding this to my regular rotation of meals. Used the Montreal Steak Seasoning on the chops. So delicious! Smelled great while it was baking too! (The pork chops were done at 25 minutes, but the potatoes needed a little more time. Will probably cut them in half next time.)

  3. It would be really nice to see after pics, as well. I’ve done this with chicken; interested to see how pork chops work out.

        1. Or add some bread crumbs or a Bisquick seasoned coating to them then bake. Haven’t tried it, but I see recipes for baked crispy pork chops

        2. Exactly. I would bake 5 minutes less than recommended time and then place under the
          Broiler on high (watching closely for about 5 minutes). They should then get a crisp top
          to them and look even more appetizing. This includes the potatoes and veggies.

    1. If you heat a skillet on stove and put them in the hot skillet then place directly in preheated oven..this will give them a little brown crispy edge. . Thats how we like ours as well. You will have to flip them and they cook really fast. I always cook my veggies seperate as they have to cook longer.

        1. Frozen veggies work on many of these sheet pan dinners – you’ll just want to adjust the time a bit, adding them a little earlier in the process if necessary and returning the pan to the oven.

    1. It definitely did. I followed the recipe and cooked for 30 min and it was so dry! The potatoes and string beans were delish!

    1. Hey Dina – This is best left uncovered, it allows the chops and veggies to brown a bit without drying out. Delicious, quick and easy!

        1. Absolutely! You can sub pretty much every ingredient on sheet pan dinners – meats, veggies, seasonings. The only changes would be to add items that bake quickly a little later to the sheet pan, and those that need more time would go in first.

      1. Just made this wonderful recipe for my family for Labor Day and it was a huge hit!! The chops were perfectly cooked and were very tasty with the McCormick’s Barbecue seasoning I used along wth salt and pepper. I used can sliced potatoes and can cut green beans. Very delicious!!

    I made this last night, and it was AMAZING! The pork chops I had were a bit thicker so it ended up needing to cook for 35 minutes. I cute the potatoes into quarters and they turned out perfect. I substituted the green beans for carrots because it’s what I had on hand. I used a similar seasoning but probably added a little more than what the recipe called for. I seasoned the veggies with the same seasoning. I’ll absolutely make this again and plan to try out some more variations as well!

  6. Super good recipe! I cooked potatoes for 25, green beans for 15 and pork chops for 15. Using sea salt pepper and Montreal Chicken seasoning gave it great flavor. The pork chops were thin, boneless and very tasty. Found them on sale at HyVee 5 for $4.62.

  7. I just made this recipe a few days ago and it is delicious! I made 7 good sized portions & and bought my pork chops marked down so each serving only cost $1.53. Much better than the $12.00 I usually spend for lunch at work. Thanks so much!

  8. It came out great but I did have to take the meat out before and allow the green beans and potatoes to cook longer. The green beans were still a little over cooked I probably should have took those out sooner too but overall great flavor and will make again

  9. I made this for dinner tonight and it turned out great! I omitted the green beans and substituted a smoky paprika seasoning for the chops. The potatoes and pork chops were perfectly cooked after 25 minutes. I will definitely make this one again!

  10. Thank you so much for sharing this recipe!! I always shy away from buying and cooking pork because it can turn out dry!!! I tried this recipe for dinner tonight! It was extremely easy and so very flavorful and not dry at all! I baked it in a convection oven at 350 degrees (which is actually 375) for approximately 25 minutes!! I did not add the seasoning blend, but next time I make it, I will add my son’s homemade rub. I did not add veggies to the baking sheet; had lots of pork to cook. But I made asparagus, mushrooms & eggplant (with some tomato) sauteed in a pan. I will definitely make this again!

  11. For a quick meal, I used the Birds Eye frozen steam fresh Roasted Potatoes and Green Beans with parmesan garlic sauce. All cooked at same time and it was awesome. No mess. Ready to eat.

  12. Delicious. I used regular thickness boneless pork loin chops. (These were outstanding, cooked perfectly with the seasoning)
    Served with mini red potatoes & green beans. Only thing I would do different is put the potatoes & green beans in later as they were over cooked.
    Definitely will make this again. Yummy!

  13. Made this for tonight’s dinner…delicious! Definitely going in my regular meal plan rotation.
    So glad I read the comments ahead of time and removed the pork after 15 minutes and kept warm…other than that perfection! I’m in love with sheet pan meals!

  14. This sounded yummy but I was out of potatoes so I substituted a sweet potato and some frozen green beans. Delicious!
    And this is a perfect recipe if you’re cooking for one! This is a keeper!
