I whipped these muffins up one night to snack on during family game night. We were playing spoons, which usually leads to ice cream for some reason. Then the next morning we have no spoons to stir coffee or eat cereal because they’re all dirty from the game playing, ice cream eating fun the night before.
But on this night, I decided chocolate chip muffins would make a fine snack. I love baking muffins, because it’s so fast and there’s an infinite variety of flavors. Needless to say, these were a hit.
I have some big plans for taking these muffins to a new level that involve cream cheese and chocolate ganache. I’m waiting for a day when I can bake in the afternoon so the photos have some daylight. We’ve had so much rain lately, I may have to settle for a dark day.
Back to the muffin recipe. Here’s what you’ll need. I didn’t grab a photo of the ingredients, but they’re all common items.

My husband thanks you for posting this recipe and says we will be having these muffins for breakfast tomorrow! I told him he should leave you a comment himself but he said, “I don’t talk to people on the internet.” I then pointed out how ironic it was that he told me this over his laptop screen where FACEBOOK was prominently displayed. Yeah. 😉

Tell you husband to enjoy the muffins tomorrow. And that people on the internet sometimes talk back 😉

I made these with less sugar (1/2 c) and white wheat flour. They were still really yummy! My dd will be delighted when she gets home from school. 🙂

Natalie, great way to pump up the nutrition and still eat chocolate!

I tried making chocolate chip muffins once and they came out bland (of all things). I’m going to give your recipe a go and hope for some muffin goodness. Thanks for sharing the recipe!

Would that have been Graeters ice cream by any chance? I have played spoons but never had ice cream along with it. Sounds fun.
Tiffany says
Graeter’s, homemade, or any other kind or brand. We’ve got our favorites, but bottom line is we’ll eat any kind of ice cream at any time. 🙂

My son makes muffins for the family one morning a week (so sweet). He’s been using a mix, though. This looks like a great, simple recipe for him to try.

Very yum!
I swapped milk for water, and I found I could peel the wrappers off better.
