Fajitas are a great way to use up veggies. And at least at our house, no one ever complains when they hear that fajitas are on the menu! This recipe is a vegetarian version. It’s a great option if you’re wanting to cut back on meat, and it freezes really well!  Having some frozen for busy nights (like when School starts up again!) would make this recipe even less time consuming!
