This simple sandwich proved to be one of the best meals I’ve had all year. Thin slices of Granny Smith apple and brie, tucked inside cinnamon swirl bread then toasted. Divine!
This idea is not my own, but I can’t remember where I first saw it. It’s been quite a while, maybe even a year ago.
The method is simple:
Slice Granny Smith apple thin. Slice a wedge of brie into thin slices. Sandwich both between cinnamon swirl bread and toast in a buttered skillet.

I’ve done something similar but a little more savory: swiss, ham, and Granny Smith apple as a grilled sandwich on sourdough bread. SO yummy! I thought apple with ham and cheese seemed a bit odd, but I love making this simple meal now.
