This is so good and easy. A delicious Mexican meal that cooks in a crockpot – 2 of my favorite things. I adapted the recipe from The Ungourmet.
Here’s what you’ll need:
Salsa Verde Steak in the Slow Cooker
Ingredients
- 2-3 lbs. boneless round steak or another cut of beef
- 1 small can of salsa verde
- 1/2 cup chicken broth beef broth or water
- 1 tsp. chili powder
- 1 tsp. cumin
- 1 clove garlic minced
- 1 onion sliced
- flour tortillas
- cheddar cheese
- lettuce tomato, sour cream etc
Instructions
- Put the steak and onions in the crockpot.
- Combine the salsa, broth and seasonings. Pour over the steak.
- Cook on high for 5-6 hours or low for 7-8 hours.
- Shred the meat and serve in the tortillas with the fixings.

Like you I’m a homeschool mom. That means my kiddos are home for lunch. I’m curos what do you do for breakfast and lunch?

Anita, we keep it very simple for breakfast. Toast or oatmeal usually. Occasionally we do pancakes or muffins. For lunch we eat up the dinner leftovers or there’s always grilled cheese, cheese tacos, peanut butter or lunch meat. Sometimes I make soup or scrambled eggs. Every once in a while we have bagels and yogurt. I let the kids choose from what we’ve got. It’s pretty simple around here 🙂

Sounds like you do breakfast and lunch the same as I do. Have you ever done a run down on staples and considered putting a stables grocery list together. I’ve thought about it, but haven’t had the time to.

I made this with bison sirloin steaks! Was very tasty! My kids loved it. Will definitely make it again. It is a lot lower in fat and calories with bison, something to think about. Wish I lived closer to my sister, Tiffany, and I could sample all these tasty recipes she posts!!

Jessica, 2 lbs. of meat would work well. You can always freeze the leftovers.

I just put a frozen chuck roast in the crockpot to have this tomorrow night. I’ll add the onions tomorrow..hopefully it works out well that way!

This might be an ignorant question, but is the steak frozen or thawed when placed in the crock pot?

Abbie, I usually thaw steak a little bit in the microwave, but not all the way. It will work either frozen or thawed.
