This easy, deconstructed sushi bowl is delicious! I often make it with tofu. Cube a block of extra firm tofu and sprinkle it with soy sauce, then bake at 400 degrees for about 20-30 minutes.

You could also add cooked chicken.

Deconstructed Sushi Bowl

Easy bowl that's perfect for a quick and healthy dinner

Ingredients

  • 1 cup brown rice
  • 6 Tbs soy sauce
  • 2 Tbs maple syrup (or use olive oil)
  • 2 Tbs sesame oil
  • 1 Tbs rice vinegar
  • 2 carrot, sliced thin
  • 1/2 head red cabbage, thinly sliced
  • 1/2 bunch green onions, chopped
  • 1 cucumber, peeled, seeded and chopped
  • 1 avocados, sliced

Instructions

  • Cook the brown rice according to package directions.
  • In a small bowl, stir together the tamari, maple syrup, sesame oil, and rice vinegar. Set aside.
  • When the rice is cooked, spoon the rice into bowls. Top with vegetables and avocado slices. Drizzle with the sauce.
