Traditional way to eat pierogies? Not so much. And I wasn’t sure at all that this would be good, but I decided to try it anyway.
The pierogies were the inspiration. Since they have mashed potatoes in them, the gravy seemed like a natural pairing. I wasn’t sure how the smoked sausage would be but it added a little zip of flavor to the other ingredients. The kids loved it and it was quick to fix. You can’t ask for much more than that.
Here’s what you’ll need:
- 1 bag frozen pierogies
- 1 onion, diced or sliced
- 2 Tbs. butter
- 1 jar beef gravy
- 1 smoked sausage (turkey or low fat), sliced
Bake the pierogies according to the package directions. I used the method of spraying them with cooking spray and then baking. They didn’t brown the way I’d hoped but they were still good.
Cook the onion in the butter in a large skillet. Stir in the gravy and the smoked sausage. Let it heat together for a few minutes while the pierogies finish cooking. Serve the meat and gravy over the finished pierogies.
You could use just about any kind of meat you have available. Leftover roast or cooked ground beef would work fine.

Oh, definitely a convenience person. I know it’s processed and I’m trying to work on that, but it’s soooooo easy. And fast. And usually cheaper, at least here in Orlando (convenience items go on sale Buy One, Get One Free at Publix all the time).

I made this tonight with Mrs. T’s mini pierogies and ground beef instead of sausage and it was soooooo good. Both kids loved it. One even declared a love for cooked onions, which he’s never gotten near before.

I’m going to make it tomorrow. Funny I bought Mrs. T’s mini pierogies too! My local ethnic store has homemade mini pierogies….fresh! Just like you would make yourself! They are so easy to make, I just brown them in a pan with butter with onions. Trick for frozen ones, pour some hot water over them to “defrost”, then just pan fry them. I never even knew you could bake them! So my version will be more of a one skillet meal!

I have never put gravy on top pf perogies. How was that? I like frying them in butter then sour cream and salsa on them, so yummy! My children dip them in ranch, but they do dip EVERYTHING in ranch.

Pierogies are dumplings that are filled with mashed potatoes. Here, we can buy them in the freezer section of the grocery. I’ve never tried making them homemade.

This is one of go to meals. I usually make my own pierogies with wonton wrappers and instant potatoes made really stiff. I usually fry them in skillet after the sausage browns with a sliced onion. then I add everything in the same skillet with dry brown gravy mix w/water. Sometimes I add green peppers too.
