I love that with the crock pot, Ethnic food doesn’t always have to be so hard and complex. I love Pad Thai, and being able to serve it to my family even in the middle of busy seasons, is so great. This recipe is made with chicken, but there’s also a Vegetarian version for those of you who want to have a nice, meatless meal!
