If you like chai, you will like these cookies. They are spiced and go perfectly with the vanilla cream frosting.
I love cake mix cookies and this one combines the cake mix with spiced chai latte mix. The cookies are soft and full of flavor.
Here’s what you’ll need:
Spiced Chai Latte Cake Mix Cookies with Vanilla Cream Frosting
Servings: 3 dozen
Ingredients
- 1 white cake mix
- 1 stick butter softened
- 2 eggs
- 1/3 cup + 1 Tbs. spiced chai latte mix
- 2 tsp. vanilla
For the frosting
- 3 Tbs. butter softened
- 1 1/2 cups powdered sugar
- 1 tsp. vanilla
- 1-3 Tbs. milk
Instructions
- In the bowl of an electric mixer, combine all the ingredients for the cookies. Mix till well blended.
- Drop by teaspoons onto a baking sheet or stone.
- Bake at 350 degrees for 8-10 minutes.
- Cool.
For frosting
- Stir all ingredients together in a bowl with a spoon.
- Add milk slowly until frosting reaches spreadable consistency.
- Frost cooled cookies.

Do you think you could make the dough a couple of weeks out and freeze? I am unfamiliar with cake mix cookies and I want to do these for a bridal shower but make ahead if possible.

Melissa, I think I would just go ahead and bake them. Cookies freeze very well. You could even frost them too, but if you want to be sure to have the frosting looking pretty, either take a lot of care when you freeze (wax paper between layers, etc) or frost after thawing.

I can only find the liquid chai mix. Does anyone know if that will work or if I need to adjust the amounts so that my batter isn’t too runny?

Lexi, I think that might be too much liquid. You could use just a bit instead of vanilla though. What if you made the cookies vanilla (or just a little chai) and used the chai for the liquid in the frosting? That might work.

These are so good! I used coconut chai and added coconut ships and white chocolate chips! The batter was very sticky which concerned me at first but they turned out fluffy and great! I will make these again!!

I also used applesauce in place of the butter in the cookie mix which could be why they were sticky.

I made these and used a mix of chai tea latte mix & vanilla chai tea latte mix (both were the powdered mix), These cookies were amazing and were also a hit at my work!!!!! Definitely will make them again!!!

The powdered chai would be in the hot drink aisle. It is sweetened.
