Beef stew is a cold-weather favorite. Tender chunks of beef and vegetables are perfect for a chilly day. Often, this is cooked low and slow to bring out the flavors, but there are days when you just don’t have hours to let it simmer. Those are the days to break out your pressure cooker.

Instant Pot Beef Stew
Ingredients
- 2 lb. stew beef
- 3 cups chopped potatoes
- 2-3 carrots, chopped
- 1 onion, chopped
- 1-2 stalks celery, chopped
- 3-4 cups tomato juice
- 1 Tbsp. sugar
- ¼ cup instant tapioca
- Salt and pepper, to taste
Instructions
- Add all ingredients to the pressure cooker pot and stir.
- Set for 35 minutes cook time.
- Do a quick pressure release.

Ummm, turned out great! Will make again…I usually make this in a brown in bag in the oven, no time for that today and it was too hot to turn the oven on!

If I don’t have instant tapioca, what can I use to replace it? Cornstarch? Also, can I use tomato sauce instead of tomato juice?

You can use cornstarch mixed with a little water. Add it at the end of the cooking time. And using tomato sauce instead of juice should work. Just add in a bit of water if it seems too thick or too much tomato
