Here’s what I know about avocados. You can use them to make guacamole. And guacamole solves problems, or at least soothes them.
The other day my oldest daughter came home from her college classes lamenting that she was having trouble learning Chinese grammar. I did what any good mom would do. I sat her down in front of a bowl of homemade guacamole and chips. It worked every bit as good as chocolate and ice cream would have.
I should have taken a new photo of the guacamole before I let her eat it. The photo for that recipe is pretty bad. The taste and ease of the recipe make up for it though.
The only other recipe I have that uses avocado is Summertime Tuna and Tomato Salad. So yummy!

I prefer to make it in the summer when corn and tomatoes are in season. I make a big batch and leave out the feta and avocado. It keeps well in the fridge, and I scoop out what I need and add the feta and avocado just before serving.

We use avocado in one of your recipes. The chicken soft tacos from http://eatathome.wpengine.com/2011/10/sloppy-slow-cooked-chicken-tacos.html are great topped with fresh slices of local avocado. I am lucky to live in So California — the avocados from around here are so good. And the kids love them too!
