Instant Pot Chicken Avocado Lime & Cilantro Soup
When you think soup, you probably think of something warm and comforting. Heavy and creamy might also come to mind. You probably didn’t think bright or fresh – but that’s exactly the flavor profile you’ll get from Instant Pot Chicken Avocado Lime & Cilantro Soup.
This Tex-Mex inspired soup includes some of your favorite burrito or taco ingredients. The base of this soup features chicken, rice, black beans, and tomatoes in a chicken broth. It’s hearty, and flavorful, but doesn’t feel heavy since a bit of lime juice brightens up the broth considerably.
The finished Instant Pot Chicken Avocado Lime & Cilantro Soup is topped off with freshly chopped avocado and cilantro – and this is the magic touch. Adding just a few fresh ingredients to this really changes the whole feel. Monterey Jack cheese and crumbled tortilla chips are optional toppings, too, and they really kick up the Tex-Mex feel of the soup.

Instant Pot Chicken Avocado Lime & Cilantro Soup
Ingredients
- 2 Tbsp. olive oil
- 1-2 cloves garlic, minced
- 1 onion, chopped
- 1 can green chilies
- 2 lbs. frozen chicken tenders
- 2 - 32 oz. cartons chicken broth
- 15 oz. can diced tomatoes
- 15 oz. can black beans
- 2-3 Tbsp. lime juice
- ½ cup brown rice
- Salt and pepper, to taste
For Serving
- 2 avocados, chopped into bite-sized pieces
- 2 Tbsp. cilantro, chopped
- Monterrey Jack cheese, for topping
- Crumbled up tortilla chips
Instructions
- Hit the sauté button and add olive oil, garlic, onion, and green chilies. Sauté for a few minutes until the onion has softened.
- Add chicken, chicken broth, diced tomatoes, beans, lime juice and rice.
- Set the manual cook time for 30 minutes.
- Do a quick pressure release.
- Remove the chicken to a cutting board, shred, and return the pot. Stir to combine.
- Season with salt and pepper to your liking.
- When ready to serve, stir in the avocado and cilantro. Top with cheese and tortilla chips, if desired.

I made this last week – so good! Only thing I changed was using crushed tomatoes instead of diced because my daughter won’t eat chunks of cooked tomatoes.

This was a wonderful combination of flavors. I used jalepeno diced tomatoes and only had basmati rice. Both good subs. I recommend this quick and easy meal!

This is a great recipe! I made it for the second time today and I usually just add more lime and more rice to make it a bit thicker. I also throw in a ton of seasonings at the end to taste, it’s a fantastic as well as surprisingly quick and easy soup with accessible ingredients that I can eat for days. Thank you for sharing!
