This cake is all about the frosting. Oh my goodness! I don’t know why I never thought to do this before.
The coffee flavored butter cream is delicious eaten from a spoon or licked from the bowl. But save some for the cake, because it’s a perfect pairing with chocolate cake.
I don’t have any ingredient pictures to share with you this time. I may have been so excited about this recipe idea, that I forgot to snap a photo.
For the cake, I used The Cake Mix Dr. recipe for Basic Buttermilk Cake. Any chocolate cake will do. Hershey’s has a great cake recipe on the back of the cocoa powder. Or just make a box mix.
This is really all about the frosting. Here’s how you make it:
- 1 stick butter, softened
- 3 3/4 cups powdered sugar
- 1 tsp. vanilla
- 3-4 Tbs. strong brewed coffee, cooled
With an electric mixer, beat the butter till smooth. Add the powdered sugar, vanilla and 2 Tbs. coffee. Mix again until well blended. Gradually add more coffee, by the teaspoon until the frosting reaches a spreadable consistency.
So easy!
