I love it when I make a good meal, and it makes plenty of leftovers for us to enjoy the next day. This Chicken Curry is one of those meals that feeds my crowd and lets me have some for lunch the next day too. It’s the best thing ever!
This is yet another easy, frugal recipe that has a lot of flavor. It’s just proof that food doesn’t have to be fancy or complicated in order to be delicious and satisfying. The coconut milk gives it the best, creamy flavor and it is the perfect pair with rice.

Of course, the natural thing to pair curry with is a a nice fluffy rice and some naan bread. But you could put the curry over quinoa or cauliflower rice too and it’d be scrumptious! I like to serve something fresh with each meal. I think a nice spinach salad would be a great match for this curry. You could probably even swap out the apples and use mango instead, or vary it in any way you like.
