I’ve probably said a dozen times how much I love Mexican and Tex-Mex flavors. I really, really do! And recipes like this one get my mouth watering in no time flat. Not just because it looks incredibly delicious, but because it is also incredibly easy! And that’s the other thing I really, really love when it comes to cooking- easy stuff!
This Salsa Chicken with lime and mozzarella is basically just that: Chicken with a good salsa in the slow cooker. Fresh squeezed lime juice. Top it with good mozzarella and broil it to melt the cheese. It’s practically begging me to make it for dinner this week!

I think one of the reasons I love Tex-Mex is that there are so many great things you can serve with this kind of meal. You could go as simple as wedge salad, chips and guacamole (Because Tex-Mex is always better with avocado!) or more elaborate with a corn salad or grilled veggies. So I don’t know if this is common or not, but my oven doesn’t have a broiler function. Any other suggestions? This looks absolutely delicious and can’t wait to make it!
Mindy, you don’t have to broil this one. Just sprinkle the cheese on the chicken while it’s still in the crockpot and it will melt. It won’t get that browned look, but it will still be good 🙂
