I thought I was making a salad, but my family decided it was a salsa. It did taste good scooped up on chips.
There must be a kachillion ways to make this dish. I put mine together based on what I had available in the pantry.
- 1 can corn, drained
- 1 can black beans, drained and rinsed
- 1 can diced tomatoes with green chilies
- a palm full of chopped cilantro
- salt, to taste
- 1 cup shredded Monterey Jack cheese
Mix all the ingredients together, except the cheese. Add the cheese right before serving. Eat with a fork, like a salad or scoop it up on chips like salsa. Your choice!
YUM! I keep some form of this concoction in my fridge at all times so I can make burritos out of whatever meat is leftover from the previous night’s dinner!

Salsa, salad, it looks like it tastes good on chips or plain! What a versatile mixture – it could even be quesadilla filling!
I dont like black beans. would I try double the corn or something else??
Cheryl, I like Lucretia’s idea of using a different kind of bean, maybe kidney beans or red beans.
you could put it over mixed greens and make it a salad 🙂

I would use some other kind of bean that you do like
I keep a similar mixture in my fridge all summer – make a salad, burrito, quesadilla, whatever really fast.
We had this at a party. They served it with grilled chicken and their salad had rice mixed it also. Friends said they had seen it with yellow rice in the salad. It was very good! TFS
We make something similar, too. Sometimes we serve it over spinach or lettuce, sometimes in a tortilla, sometimes with chips. Yum!
Love it love it. We add a little balsamic, lime juice and cumin to the mix. I could eat it by the spoonful!

This is my kind of recipe!! You know, it would also be delicious as a topping for tostados or tucked into a wrap. Or to top nachos…Mmmm. Good stuff!
Try adding a little lime juice (fresh) and pinto beans are a good substitute for the black beans. It is definitely a summer keeper.
Yumm-O! This is a new personal favorite! I added some cumin, garlic powder and a can of garbanzo beans and I love it!

I am trying to incorporate more fiber into our diet. I put it on top of some grilled turkey burgers……both my husband and I LOVED it. he was a little skeptical because he is not a huge fan of cilantro but he couldn’t get enough. I used about 1/2 the cheese (low fat) and I added a little lime juice and grilled an ear of fresh white corn (it was on sale). OMG. this is such a keeper. thank you
