I have a confession. I don’t always use the bananas that get too ripe on my counter. I watch them spot and darken and shrivel. Then, instead of baking them into banana bread, I throw them away. There. Now you know the kind of person I am.
But the other day, I did rescue some old bananas from certain garbage. I wasn’t in the mood for Banana Bread or Cream Cheese Banana Bread with Orange Glaze, so I did a search on Tasty Kitchen and came up with this recipe.
Here’s what you’ll need:
1 cup butter, softened
1 cup sugar
2 mashed bananas
3 1/4 cups flour
1 tsp. baking powder
1 tsp. baking soda
1/2 tsp. cinnamon
1/2 tsp. salt
semi-sweet chocolate chips – 1 bag
(The recipe only called for 1 cup of chips, but we like lots of chocolate.)
Cream the butter and sugar together in a mixer bowl. Add the eggs and bananas. In a separate bowl, stir together the dry ingredients. Slowly add the dry ingredients to the wet, mixing until combined. Stir in the chocolate chips. Drop by rounded teaspoonfuls onto a baking sheet or stone. Bake at 350 degrees for 10-12 minutes.
The cookies are soft and cake-like. The combination of chocolate and banana is complemented by the touch of cinnamon. I’m a bit ashamed to admit that we ate the whole batch of cookies in one afternoon/evening. But I started out with confessions, so I may as well end that way too.

Yum! A woman I used to work with made cookies like this all the time. She would sometimes add a little coconut to give it a different flavor. I’m like you–I don’t always eat or use the over-ripe bananas. It feels good to confess that!

I bought bananas yesterday so I could make some bread or something.. I will have to try these.. and I’m just like you.. I buy them, then throw them.. sometimes I might throw they in the woods for the critters but most of the time straight to the trash.. I am really goin to try this weekend to do something with them.

I don’t blame you…if I made banana bread everytime I got old banana’s, I’d be making a flippin lot of banana bread. These cookies look great though…glad you rescues those bananas!

I’m the biggest offender when it comes to throwing away overripe bananas! I’ve finally let go of the guilt after several years of this wastefulness! 🙂 this looks like a great recipe, thanks for trying it out and sharing!

My daughter is putting these in the oven as I type. For the record…..we all HATE overripe bananas. But, we just peel them and freeze in a bag for smoothies, my husbands awesome banana bread or any other recipe calling for bananas.
I will often peel and then freeze bananas for smoothies.
YUMMY!! This is one of the easiest and best banana breads I have ever had! I did bake for an extra 10 minutes, and it was perfectly brown on the outside and nice and moist on the inside. Great spread with cream cheese. The banana flavor is fabulous!Thanks for posting! ~Manda
