Baked sweet potatoes are such a great staple – perfect as a side or as part of the main dish – and with the Instant Pot, they’re easy enough for a weeknight.
Making sweet potatoes in the oven can take a while – I typically bake them for an hour and a half. But an hour and a half on a weeknight is hard to come by. The Instant Pot speeds up sweet potatoes considerably.
Instant Pot Sweet Potatoes
For average-sized potatoes, 20 minutes of cook time will do the trick. If you have particularly large sweet potatoes, you can increase the cook time by a few minutes; if your sweet potatoes are a bit smaller than normal, decrease the cook time by a few minutes.
Instant Pot Sweet Potatoes are a year-round favorite. Using the Instant Pot also frees up your oven for other dishes, which can be particularly helpful on holidays. During the warm weather, making sweet potatoes in the Instant Pot instead of the oven will keep the house cooler.

Instant Pot Sweet Potatoes
Ingredients
- 8 sweet potatoes
- 1 cup water
Instructions
- Wash the potatoes and prick each potato 4-5 times with a fork
- Pour the water into the pressure cooker pot, and add the rack.
- Place the potatoes on top of the rack.
- Using the manual setting, set the cook time for 20 minutes.
- Let the pressure release naturally for 10 minutes, then release any remaining pressure.
