Would you believe that delicious stuffed potato is a 15 minute meal? Now that’s fast food!
It’s super easy to fix, thanks to the sweet potato. They are all scrubbed, wrapped and ready to microwave from Express Bake PotatOH!
As soon as I was contacted by the Express Bake PotatOH! people I knew what I wanted to do with the sweet potatoes. And it didn’t disappoint. Sweet potatoes have never been topped so well. While the potatoes took a spin in the microwave, I fixed the sausage and apple topping. The entire meal was ready in about 15 minutes.
I also had the opportunity to try baked potatoes and fingerlings. Delicious and so easy! I topped the baked potatoes with creamed chicken. My kids loved it. The potatoes bake perfectly in the microwave. Express Bake PotatOHs are perfect for nights when you’re in a hurry. They can be topped with all kinds of things or eaten as a side dish. Either way, they are quick and healthy.
Here’s what you’ll need for the Sweet Potatoes topped with Chicken Apple Sausage and Apples:
Serving size: 2
- 2 Express Bake PotatOH! microwaveable sweet potatoes
- 1 granny smith apple, peeled, cored and chopped
- 1 Tbs. butter (ignore the extra butter in the photo)
- 2 chicken apple sausages, sliced
- salt and pepper to taste
- Microwave the potatoes according to the package directions.
- Cook apple in butter in a skillet over medium heat. Cook until apple is nearly soft.
- Add sausage to the skillet and cook until it's hot and the apple is tender.
- Season with salt and pepper and serve over baked sweet potatoes.
The creamed chicken recipe is also super fast, providing you’ve got cooked chicken in the freezer. This makes a comforting and fast weeknight meal. Here’s what you’ll need:
Serving size: 4
- 4 Express Bake PotatOH! microwaveable potatoes
- 2 cups cooked chicken, chopped or shredded
- 1 can cream of chicken soup
- ½ cup milk
- salt and pepper to taste
- Microwave the potatoes according to the package directions.
- Combine the chicken, soup and milk. Heat in the microwave or in a pan on the stove.
- Serve creamed chicken over baked potatoes.
I was very impressed with the quality of these potatoes. They cooked perfectly in the microwave and were super convenient. You can find more about Express Bake PotatOH! brand products on YouTube. I’m kind of a food geek, but I loved these videos. It was fun to see how they plant and harvest the potatoes and the fact that they grow in Colorado (we visited there this summer) made it even cooler! Now I know how those huge irrigation contraptions get used. Awesome!

I have some regular potatoes and some leftovers from chicken and dumplings that I am going to now put on top of a baked potato. I never would have though to put creamed chicken on a potato, thanks for the idea. By the way I have enjoyed your site and have used many of your recipes and ideas for the grocery store.
