It’s beginning to look a lot like Christmas!  But it won’t really taste like it to me until I make Peanut Butter Balls.  They’ve been my favorite Christmas candy ever since I can remember.  What’s your favorite Christmas candy or cookie?

We’ve been listening to Christmas music on Pandora, streaming it through our Roku.  I don’t usually listen to music in the house, because our house tends to have a lot of built in noise.  I don’t like adding to it.  But it’s been fun to listen to Christmas songs while fixing dinner or playing cards.

Last year, I shared this video about how they make candy canes by hand in Disneyland.  I love this process, so I wanted to share it again.  Have you ever had one of these special candy canes?  I think they have such a limited amount of them that you have to have a special ticket reservation to buy one.

This is a Disney inspired recipe, but I’ve never actually eaten the real thing.  I heard about African Pulled Beef Sandwiches that are found in Animal Kingdom and they just sounded so good.  But I’m a long way from Disney World, so I decided to create my own version.

Apparently, they don’t actually taste like the original.  Fathom that, since I’ve never had the original and I totally made this recipe up the way I thought it sounded good.  However, these sandwiches really are good!  The meat is tender and full of flavor.  And the cucumber-yogurt-mint sauce cools down the spice and adds a creamy complement to the meat.

Last month, Jim and I got to spend a long weekend in Disney World.  Just the two of us.  (And about a gazillion other people, too of course.)

We were celebrating our 25th wedding anniversary a little early.  It was our first trip without kids and we had a great time.  The Magic Kingdom was decorated for Christmas.  We also got to go to Hollywood Studios to see the Osborne Festival of Lights.  If you ever have the chance to do that, you’ll want to grab the opportunity.  It is incredible!

A few weeks ago, I read about candy cane making at Disneyland on the Disney Food Blog.  Here’s a video of the process.  So cool!

While we were in Disney this time, we tried the caramel apples for the first time. They had put some out to sample in a Fantasyland shop while we were browsing. I’d always thought they were just for looks, but the are truly scrumptious! We ended up buying 3 to bring home with us. Here’s a video of how they make the apples.
