This is a Disney inspired recipe, but I’ve never actually eaten the real thing. I heard about African Pulled Beef Sandwiches that are found in Animal Kingdom and they just sounded so good. But I’m a long way from Disney World, so I decided to create my own version.
Apparently, they don’t actually taste like the original. Fathom that, since I’ve never had the original and I totally made this recipe up the way I thought it sounded good. However, these sandwiches really are good! The meat is tender and full of flavor. And the cucumber-yogurt-mint sauce cools down the spice and adds a creamy complement to the meat.
As a bonus they always make me think of Disney World when we have them. If you’re hankering for a trip to Disney, our sponsor, The Magic For Less Travel has great deals on packages for 2014.
