Frosted Banana Bars

These are so, very good.  Of course, anything topped with cream cheese frosting is delicious.  An online friend shared the recipe with me.  I’m not sure where she found it.  She says that it freezes well too, which is nice because it makes a big pan.  My family had no trouble eating them all though.

Here’s what you’ll need:

See that can of baking powder?  Ignore that.  I grabbed the wrong ingredient.  You’re really going to need baking soda.

  • 1 stick butter, softened
  • 1 1/2 cups sugar
  • 2 eggs
  • 1 cup sour cream
  • 1 tsp. vanilla
  • 2 cups flour
  • 1 tsp. baking soda
  • 1/4 tsp. salt
  • 2 mashed bananas

Cream the butter and sugar in a mixer bowl.  Add the eggs, sour cream and vanilla.  Stir the baking soda and salt into the flour, then add the dry ingredients to the wet.  Mix well.  Add in the bananas.  Spread into a greased 10″x15″ pan.  Bake at 350 degrees for 25-30 minutes or until a toothpick comes out clean.  Cool completely before frosting.

For the frosting you’ll need:

  • 8 oz cream cheese, softened
  • 1 stick butter, softened
  • 2 tsp. vanilla
  • 3 3/4 cup powdered sugar

In a mixer bowl, beat the cream cheese and butter together.  Add in the vanilla.  Gradually mix in the powdered sugar until it reaches a spreadable consistency.  Spread on the cooled banana bars.  Store the bars in the refrigerator.

  2. I made these today for a church event and they were a huge hit. I love them too! I only used about 2/3 of the frosting on mine and they were fine. I stuck the rest in the fridge for another time. Thanks for the yummy recipe!

  4. I have to make this for my husband. Have you seen those little banana cakes individually wrapped called Nemo’s…you buy them at convenience places like Circle K? He loves those, and I’ll bet this is much much better.

  9. I made this about a month ago for us and some friends. We all thought it was wonderful! I also added some chopped walnuts to the batter.

  12. I made these and I used 3 bananas. For the frosting I used one and a half cups powdered sugar. They are great. I also used 1 teaspoon banana oil.
