Pulled Pork & Mexican Coleslaw – 100 Days of Summer Slow Cooker Recipes

Sometimes, you just gotta have you some Mexican flavors. This take on pulled pork is one I think we’ll be enjoying often in the future!

I think pork is one of those meats that was “made” for the slow cooker. The longer, slower cooking time really lets the flavors blend so well.  These Pulled Pork Tacos are so flavorful, and the Mexican slaw is just the right thing to give it a fresh, delicious twist.

I like tacos because they are simple to serve and yet always a big hit. I love guacamole as a side to almost anything Mexican, and I don’t think this would be an exception! Whether you opt for chips and salsa, or guacamole as a side, I’m sure that these pulled pork tacos will be a hit at your dinner table, too!
