This soup is really just assembly only, as long as you’ve got the bacon and onions in the freezer. It’s a good one to keep in mind for those nights when you really don’t have time to cook, but everyone needs to be fed.
The bacon, onion and tomatoes add a lot of flavor to the beans. It reminds me of the flavor of Italian Sausage and Bean Soup.
Here’s what you’ll need:
- 2-3 slices of bacon, diced and fried
- 1/2 onion, diced and cooked with bacon
- 1 can butter beans
- 1 can kidney beans
- 1 can pinto beans
- 1 can diced tomatoes, undrained
- 1 box (or 2 cans) chicken broth
- 1/2 tsp. oregano
- salt and pepper to taste
If you have the bacon and onion already cooked and frozen, pop it in the microwave to thaw a bit. Toss everything into a soup pot and heat.
That’s it! Add cornbread or a sandwich and you’re good to go.

Lima beans or great northern beans would work also.

I am making this tonight. How important is the oregano? (I am not a huge oregano fan…..)
Crystal, I don’t think the oregano is really important. Leave it out or substitute for seasonings you like.
Made this a couple of days ago and it is delicious, just like my favorite Campbells, only better. This will certainly be a new addition to our menu rotation.

Just added this to the menu plan for next week. This is my very favorite Campbell’s soup variety, but I have stopped buying it because there is sooooo much salt in it. Can’t wait to try this. Thanks for posting.
