Need a little weeknight comfort food?  This one’s for you then.

This recipe came about when I looked up from my computer and realized it was already 5:30 and I hadn’t started dinner.  (And no, the irony that I’m a food blogger and still have this problem is not lost on me.)

I had a smoked sausage in the fridge and a daughter begging for mac & cheese.  But I didn’t want to make the usual kind.  A rummage through the cheese drawer yielded a block of Swiss and a new recipe came into being.

Here’s what you’ll need: 

Swiss Macaroni and Cheese with Smoked Sausage

Servings: 8 servings

Ingredients

  • 4 Tbs. butter
  • 1/2 onion diced
  • 4 Tbs. flour
  • 3 cups milk warmed
  • 1 Tbs. Dijon mustard
  • about 2 cups shredded Swiss cheese
  • 1 lb. smoked sausage heated according to package directions, sliced
  • 1 lb. pasta shells cooked

Instructions

  • Melt butter in large skillet over medium heat.
  • Add onion and cook till soft.
  • Whisk in flour and cook 1 minute.
  • Whisk in milk. Cook over medium heat, stirring often.
  • Add mustard and cheese.
  • When cheese is melted, combine sauce, cooked pasta and smoked sausage.

  1. We made this a few nights ago and it was yummy! I think we’ll tweak it next time to fit with our rice cooker mac & cheese recipe, simply because I’m lazy. 🙂

  2. I love the combo of sausage and lentils together. In fact I just made an easy one-pot mix of the two last week. This is definitely a few steps up from that! Looks great.

  3. I know this is an old post but I just had to comment. I’ve never seen or heard of anyone else making swiss mac ‘n cheese. It’s one of the recipes my dad grew up with and then I grew up with. Our version is just straight swiss cheese and elbows. My dad always put hot sauce on his, I used steak sauce and my mom ate it plain.

I’ll be sixty years old next March and seeing this took me back to my grandma’s kitchen in northeast Ohio where she would always make this when I came to visit as she knew it was one of my favorite dishes that she made. This is and was the ULTIMATE comfort food for me. The Swiss cheese just makes this a thousand times better than using the standard cheddar. If you really want a new twist, try using smoked gouda as well.
