This soup is really just assembly only, as long as you’ve got the bacon and onions in the freezer. It’s a good one to keep in mind for those nights when you really don’t have time to cook, but everyone needs to be fed.

The bacon, onion and tomatoes add a lot of flavor to the beans.  It reminds me of the flavor of Italian Sausage and Bean Soup.

Here’s what you’ll need:

  • 2-3 slices of bacon, diced and fried
  • 1/2 onion, diced and cooked with bacon
  • 1 can butter beans
  • 1 can kidney beans
  • 1 can pinto beans
  • 1 can diced tomatoes, undrained
  • 1 box (or 2 cans) chicken broth
  • 1/2 tsp. oregano
  • salt and pepper to taste

If you have the bacon and onion already cooked and frozen, pop it in the microwave to thaw a bit.  Toss everything into a soup pot and heat.

That’s it! Add cornbread or a sandwich and you’re good to go.

  1. Just added this to the menu plan for next week. This is my very favorite Campbell’s soup variety, but I have stopped buying it because there is sooooo much salt in it. Can’t wait to try this. Thanks for posting.

  3. Are butter beans known by any other name? I have never heard of them and I don’t know if i can find them in my local stores. Thanks,
