Mashed Potatoes

Mashed potatoes are a classic.  They’re very easy to make.  These are a basic, nothing fancy version.  It’s really more of a method than a recipe.

Here’s what you’ll need:

Mashed Potatoes
  • potatoes
  • butter
  • milk
  • salt
  1. Wash the potatoes.
  2. Peel and chop them.
  3. Put them in a pan and shake salt over them.
  4. Add a dollop of butter and cover them with water.
  5. Bring to a boil and cook until very tender. The butter in the water helps keep them from boiling over on the stove.
  6. When they’re done (fall apart when poked with a fork), drain them.
  7. If you have a hand-held mixer, you can mix right in your pan. Otherwise, transfer to the bowl of stand mixer.
  8. Add more butter to the potatoes and some salt.
  9. Begin to mix them, adding dribbles of milk as you go. It doesn’t take much milk, so go easy. Taste to be sure you have the right amount of salt.
  10. If you like your potatoes lump-free, cook them a long time to be sure they’re tender. Then mash them a bit before mixing. I’m not concerned about lumps in my potatoes. I think they’re good that way.

In the mashed potatoes you mentioned you use a stand mixer; I am in the process of getting one and would love to hear what model you have and if this helps with your homemade meals. I was looking at a Sunbeam Heritage mixer (alot cheaper than the Kitchen Aid) but I have read a lot of bad reviews on this. Anyhow, would love to hear what helps you in the kitchen to make all your homamde meals. What tools and appliances are essential for you completion of wonderful meals?   2. One of the things in my kitchen that I use alot is a well seasoned cast iron frypan. In fact I have 3 diferent sizes. Mine were handed down from my mother and grandmother. If it is seasoned right it is almost as good as a non stick pan. I wash mine in mild soapy water ( not in the dishwasher) even though the instructions say not to or you will have to reseason it. I have never had rust problems or had to reseason. There are directions on several internet sites, some of them make care of cast iron sound somewhat complicated but I find it pretty simple. Pioneer women did just fine using them on their way west. It is also a good way to get some iron into your family’s diet.
