Double Chocolate Bundt Cake

double chocolate bundt cake done

This cake always makes me remember bringing my now 11 year old son home from the hospital after he was born.  My mom baked this cake and she brought me a big slice of it, probably offering to hold the little dumpling while I ate the cake.

Please tell me I’m not the only one to associate food with life events.

I would appologize for sharing two chocolate cakes in one week, but how can that be a bad thing?  I’ve seen many versions of the recipe.  This one comes from a 1998 copy of Quick Cooking.

Here’s what you’ll need:

Ignore the vanilla in the picture.  It snuck in while I wasn’t looking.

  • Devil’s food cake mix
  • 1 pkg. instant chocolate pudding (small box)
  • 3 Tbs. cocoa
  • 1-3/4 cups milk
  • 2 eggs
  • 1 bag chocolate chips
  • powdered sugar for the top

Combine all the ingredients (except the chocolate chips and powdered sugar) in a mixer bowl.  Mix until well combined.  Stir in the chocolate chips.  Pour into a well-greased bundt pan.  Bake at 350 degrees for 55-60 minutes, or until a toothpick comes out clean.

Cool the cake for 10 minutes and then remove it from the pan.  Cool completely before dusting with powdered sugar.

Never a need to apologize for cake as far as I’m concerned, especially when it looks as yummy and chocolately as this!

Can I just say Yum! I haven’t had anything yummy chocolate in a while (Rick prefers non-chocolate things). Think he’s going to have to suck it up this time :)

I am visiting from SITS and your photography got my attention right away! I have five kids and cook at home a LOT. (Although two are now in college.) I am looking forward to checking out your blog!

Okay, so I made the cake and my boys liked it a lot. My husband said it was a bit dry though and I was wondering if I added some oil should I leave out some of the milk?

Nicole, I think you could add a little oil or milk to make the cake more moist. I’m surprised he thought it was dry though, because I’ve always thought it was a really moist cake. Increasing the liquid should help with that though.

I made this for my family the other day. We ate it all, but I wasn’t a huge fan. I think it was the cocoa powder. It gave it a flavor I didn’t like. I think I will try it again in a few weeks and leave that out. I’m sure if won’t change it much as there is still 3 other chocolate flavors in it. But thanks for the ideas.
