Make it simple.
This is almost always my motto when it comes to dinner.
You really don’t need a recipe for this. And you’ve probably made a version of it for your family many times. But sometimes it’s nice to have a reminder of easy meals.
Enter this Pesto Tortellini with Grilled Chicken.
Here’s what you’ll need:
I use two bags of frozen tortellini for my family of 6 and about half of the pesto sauce. The tomatoes are what we picked from the garden. I only added them for those of us who eat tomatoes. If all 6 of us were eating tomatoes, we would have needed a lot more.
If you don’t want to fire up the grill for the chicken, you can pan fry it. Or skip the chicken altogether.
Serve this with a green salad and crusty, hot bread.
I’m almost embarrassed to post this. But then, why not? It’s an easy, delicious meal that can be on the table in about 20 minutes or less.
