This is almost always my motto when it comes to dinner.
You really don’t need a recipe for this. Â And you’ve probably made a version of it for your family many times. Â But sometimes it’s nice to have a reminder of easy meals.
Enter this Pesto Tortellini with Grilled Chicken.
Here’s what you’ll need: Â
I use two bags of frozen tortellini for my family of 6 and about half of the pesto sauce. Â The tomatoes are what we picked from the garden. Â I only added them for those of us who eat tomatoes. Â If all 6 of us were eating tomatoes, we would have needed a lot more.
If you don’t want to fire up the grill for the chicken, you can pan fry it. Â Or skip the chicken altogether.
Serve this with a green salad and crusty, hot bread.
I’m almost embarrassed to post this. Â But then, why not? Â It’s an easy, delicious meal that can be on the table in about 20 minutes or less.
Sounds about perfect to me!






This was great! I fried the chicken in olive oil and garlic and it was fantastic.
Do you cook the tomatoes at all?
