Summer squash and zucchini are abundant in gardens right now. They can be turned into a quick side dish for dinner by using the microwave. It only takes 10 to 15 minutes, start to finish.
Here’s what you’ll need:
1 zuchini, cut into slices
1 yellow summer squash, cut into slices
oregano, dried or fresh – to taste
salt and pepper
2 Tbs. olive oil
1/4 cup parmesan cheese (a better quality shredded is better, but I was out so I used the Walmart brand grated)
Toss the squash and zucchini slices with the other ingredients. Sometimes I add tomatoes too. Microwave on high for about 4-6 minutes, or until tender.
That’s it. Easy, quick and healthy.

Seems like you love zucchini! I wish I had added it to my most recent recipe, you’ll see it on my site, and how perfect it would have been, but it was late and I was TIRED, and I forgot! Too bad, cause zucchini is yummy!

I love zucchini and needed to use up some in my Frig. I was too tired to brown it on the stove or oven, so decided to try this recipe. I used some of the suggestions and added some halved grape tomatoes, onion, and a bit of spinach. All needed to be used so I figured why not. This was delicious and I plan on making it often even when I’m not tired.

Quick and tasty! This is a great recipe or when the neighbor’s garden overflows and squash appears at the door.
Love this. I add small can basil diced tomatoes, onions, basil, and Italian herbs, and garlic. Just wonderful!!
