Instant Pot Mashed Potatoes are a sped-up version of your favorite side dish.
Mashed potatoes are always a crowd favorite, but how often do you make them on a weeknight? Once you realize how easy it is to make Instant Pot mashed potatoes, you’ll be making them all the time!
Instant Pot Mashed Potatoes
These have the normal prep of mashed potatoes – washing, peeling, chopping, but instead of boiling, you pop them into the Instant Pot. They come out perfectly tender and ready to be mashed.
To me, the big perk of making Instant Pot mashed potatoes is that it frees up space on the stove for other things. When I’m making a big meal, burner space always seems to be at a premium – and having one less thing to watch is always a good idea!
I kept the seasoning on these simple, just milk and salt, because that’s what our family prefers. This base recipe can easily be adapted to your personal taste, or dressed up just as easily. A little sour cream and chives would be a great addition, as would a little nutmeg or rosemary.
I prefer to finish Instant Pot mashed potatoes in the stand mixer because it speeds things up nicely. If you don’t have a stand mixer, a hand mixer or a potato masher will do the trick too.
Instant Pot Mashed Potatoes
Ingredients
- 2½ lbs. potatoes
- 1½ cups water
- Salt
- Butter
- Milk
Instructions
- Wash, peel, and chop the potatoes.
- Add the rack to the pressure cooker. Place the potatoes on top of the rack. Shake salt over the potatoes. Add a dollop of butter on top. Pour the water over the potatoes.
- Using the manual setting, set the cook time for 8 minutes. Do a quick pressure release.
- Remove the pot from the pressure cooker and drain the potatoes.
- Put the potatoes in the bowl of a stand mixer or another large bowl. Add more butter and salt. Mix, using a stand mixer or hand mixer, adding dribbles of milk as you go. It doesn't take much milk, so go easy.
- When you reach the desired consistency, taste and add more salt if needed.
