I would very much like to shake the hand of the person who invented the slow cooker. Said person should be lauded with chocolate and roses and decadent coffee concoctions.
I’m naturally suspicious of cooks who don’t make good use of the slow cooker. Why avoid something that is such a time saver, such a miracle worker?
Take this dinner, for instance. Into the crock go pork chops, apples, onions and a bit of honey and Dijon. Several hours later, you only need to add a green veggie and bread or salad and dinner is ready. It practically fixes itself, leaving me with time to get stuff done spend time on Pinterest.
Honey Dijon Pork Chops and Apples in the Slow Cooker
Ingredients
- 1 1/2 lbs. pork chops boneless or bone-in
- 5 small apples peeled and sliced
- 1 onion sliced
- 3 Tbs. honey
- 1 tsp. Dijon mustard
- 1/2 tsp. Kosher salt
- generous grind black pepper
Instructions
- Place pork chops on bottom of crock.
- Stir honey, Dijon, salt and pepper together.
- Pour over apples and onions and toss to coat.
- Place apples and onions on top of pork chops in slow cooker.
- Cook 5-6 hours on high or 7-8 hours on low.

Hi there people..I made this for our dinner on 28/6/12 my hubby loved it. I thought it was a bit fatty,but when hubby says its good it must be, hes is so hard to please. I think next time I wont cook as long, meat just fell off the bones, which its supposed to but think maybe bit too much. I would highly recommend trying this dinner its so simple to make.I se4rved it on Maggi 2min noodles. I couldn’t find Kosher salt any where in 2 of our supermarkets, Ive never heard of it maybe we don’t have it in New Zealand..Thanks for sharing..

I made this for dinner today using a pork loin instead of chops. The loin was frozen (so this also helped me clean something out of my freezer). After about 5 hours, it was ready. Smelled delicious while it was cooking and it was very good–mild dijon flavor, sweetness from the apples, and good loin taste. I will be making this again. Thanks, Tiffany!

Hi Tiff: I too would like to shake that person’s hand. The Crockpot has been my go-to since 1976. I am always amazed at those who aren’t converts. There was a really interesting article in the New York Times by a food critic who just discovered it, after all these years. Fancy food people have tended to look down on the CP. Silly folks.
Anyway, wanted to tell you I made this pork chop recipe but with chicken since I don’t eat pork. I used a cut-up Amish chicken, and followed recipe except that I added lots of French herbs. (Shallots, marjoram, etc. I used those Penzey’s mixes I mentioned before — Parisian and Sunny Paris.) Plus parsley. Wonderful addition. I also used some maple syrup with the honey. You had mentioned this on your video and I thought it sounded good. Worked out really well. I made TJ quick brown rice (15 minutes) and served the stew over it. Yum. Thanks again for all you do.

Not sure how thin to slice the apples or onions as the recipe doesn’t specify. Has anyone that has made it tell me how they prepped the apples and onions? Thanks.

Great question, Maryann! The ones in the picture were cut into about 16 slices for the apples and about the same width or a little smaller for the onions, but you really could go with personal preference here too. If you like onions, you can slice them thicker for a “stronger taste” or make the apples chunkier if you prefer the hearty taste. The good thing is that you really can’t mess up the flavors however you decide to slice them 🙂
