Is there anything lovelier than soup?
At the end of a long day full of a kajillion tasks and responsibilities, a bowl of soup soothes the rough edges on a frazzled family. Serve it with warm, buttered cornbread fresh from the oven and dinner will be the best part of your day.
Here’s what you’ll need:
- 1 onion, diced
- 1 Tbs. butter
- about 4 cups chopped, peeled potatoes
- 2 boxes chicken broth
- 2-3 cups diced ham
- 1/2 lb. Velveeta
- salt and pepper, to taste
Cook the onion in the butter till it’s soft in a large soup pot. Add in the potatoes and the chicken broth. Bring to a boil and cook until the potatoes are tender. Turn down the heat.
Stir in the ham. Add the Velveeta. You can use a knife to cut it or just tear it up with your hands and drop the pieces in, which is the way I do it. Let the Velveeta melt in the soup, but try not to let the soup boil again. Add salt and pepper to your liking.

An easy favorite soup of mine:
1 lb. hamburger meat browned
1 can rotel tomatoes
1 can pinto beans
1 can minestrone soup
1 can water
The soup needs a name…

Oops… Change out pinto to ranch style beans. If you like it spicy get the beans with jalapeño

Allergic to dairy. No cheese, add double onion, garlic, and leeks. Lightens the carb count too
