There must be a million and one variations of potato salad. This is my mom’s version, which is a lot like my Grandma’s version. The main difference is that mom adds sweet pickles to hers. Grandma’s was full of paprika and is one of my favorite foods that she made.
Here’s what you’ll need. Usually, I use real mayonnaise in recipes, but mom uses salad dressing in her potato salad so that’s what I used too.
- 6 potatoes, peeled and chopped (about 4 cups)
- 1/3 cup chopped onion
- 1/3 cup chopped sweet pickles
- 4 eggs, hard-boiled and chopped
- 2 stalks celery, diced
- 1 cup salad dressing, like Miracle Whip
- 1 Tbs. sweet pickle juice
- 1 tsp. yellow mustard
- 1 tsp. paprika
- salt and pepper to taste
Boil the potatoes in a 3 quart saucepan until they are tender, about 20-25 minutes. Drain and run under cool water to stop the cooking process. Put the potatoes in a large bowl and stir in all the other ingredients. Taste for salt and add more if needed.
Refrigerate for several hours or overnight before serving.

Cheryl, a name brand salad dressing is Miracle Whip, but you can buy store brands too.
Does anyone else like to eat their potato salad while it’s still warm? That’s my favorite way. I will even warm up cold potato salad.

I like warm potato salad too. Eat it freshly made or warmed in the MW. I always add Vidalia onion to mine. I bought a quart jar of capers at Costco. I’ll put some in my next batch of potato salad! Use a few spoons of the juice too. Bought a huge jar of marinated artichokes and will add some to my potato salad too. Mmm
Always mayonnaise—homemade is best. Kraft second best.

My magic ingredient is 1/2 sour cream – 1/2 mayo. And I usually use red potatoes…
…I also toss the potatoes with some homemade Italian dressing while they are warm. The next day I add all the rest of the goodies.

This recipe is very close to the one I use. I don’t use celery or paprika but I ALWAYS use Miracle Whip and French’s yellow mustard. A little restaurant in my home town serves potato salad much like this and my Dad managed that place for years. So that was my favorite thing to eat when I was there. He finally shared the recipe with me and I have modified it a little. Every here who tries it loves it because so many people make it with onions and dill pickles and it can get a little bitter. We love a sweet tater salad.
