This stew can be made in the crockpot or the oven. I used the oven this time, since it was a Saturday and we were home all day.
Gather up your ingredients:
Instant Pot Beef Stew

All Day Beef Stew – Oven or Crockpot

Ingredients

  • 2 lb. stew beef
  • 3 cups chopped potatoes
  • 2-3 carrots chopped
  • 1 onion chopped
  • 1-2 stalks celery chopped
  • 3-4 cups tomato juice
  • 1 Tbs. sugar
  • 1/4 cup instant tapioca
  • salt and pepper to taste

Instructions

  • Mix all the ingredients in a heavy, covered pan or the crockpot.
  • If you use the oven, cook on 250 degrees for 4-5 hours, stirring 2-3 times during the cooking.
  • If you use the crockpot it should take 4-5 hours on high or 6-8 hours on low. And you won’t need to stir during the cooking

I’ve also “cheated” with this recipe and used the frozen bags of stew vegetables from the grocery. They don’t need nearly as long to cook and taste almost as good. Plus they have pearl onions in them, which I happen to love.

    Well…my crockpot died a couple of years ago and I have not replaced it, because my hubby likes “oven” food better. This is perfect for us….I am going to try this recipe.

  3. Hello! I noticed your recipe uses Tapioca, any reason for that? I have never put that in mine and would never have thought to. Thanks for the great recipe.

    1. Colleen, the tapioca just helps thicken the sauce. I’m sure there are other ways of thickening it up. I wouldn’t have thought to use tapioca either, but that’s the ingredient the recipe uses.

  4. Can you put the meat in frozen or does it have to be thawed? I’ve never made stew before but have the stew meat and would like to try it.

    1. Melissa, I’ve never done this recipe with frozen meat. You might want to thaw it enough to at least get the cubes apart. But I think it would work, as long as you give it plenty of cooking time.

  5. I was wondering if you have a calorie count on this? I am losing weight by counting calories and it is important that I have this information. This recipe looks so good and I hope to be able to try it.

    1. Betty, not a dumb question at all. I think it is with the instant puddings and jellos, but probably on either a top or bottom shelf. It’s a different shaped box than the jellos.
