Pesto and Crushed Tomato Shells – 3 Ingredients, 15 Minutes

So I just read the title and it is a bit misleading.  This recipe contains no shell of tomato, crushed or otherwise.

It does have pesto, crushed tomatoes and pasta shells.  And that’s it, except the mozzarella cheese sprinkled on top.  Because you know how I can’t resist cheese.

15 minutes, start to finish and that includes time to boil the water.  Throw a salad at it and call it dinner, and a good one too.

Here’s what you’ll need:

  • 1 lb. medium pasta shells
  • 28 oz crushed tomatoes
  • 4 oz pesto (1/2 prepared jar)

Cook the pasta according to the package directions.  Stir the crushed tomatoes and pesto together in a saucepan.  Heat over medium-high heat while the pasta cooks.

Drain the shells and combine with the sauce.  Serve with a sprinkle of cheese, if you like.

The extra pesto can be frozen for later.

  1. I have never tried pesto. I think something like this would be a good way to try it since everything else in the dish is something we’ll eat. The bonus is it is meatless since a household member does not like meat in pasta and red sauces.

  2. You have to try homemade pesto! My daughters love it with mozzarella cheese and tomato slices in a grilled cheese of sorts. I just blend fresh basil, walnuts, olive oil, Parmesan cheese, garlic, salt and pepper……delicious. I think we’d love a panini maker for additional concoctions?

    • Sherri, I made homemade pesto once and it was delicious. The only thing that keeps me from doing it more often is a lack of food processor. It’s possible with a knife, but it takes a while. I sometimes use our George Foreman grill as a panini maker. Not exactly the same, but close. Pesto on panini – good idea!

      • I’ve often thought about using my George as a panini maker but never have. Have you tried wraps instead of bread as a panini? Yum.

  3. I use the blender because I don’t have food processor. I don’t have a George Foreman either but that could be more versatile. Good idea!
