That’s a long title for a cookie that only has 6 ingredients. These are chocolatey and moist. The coconut makes them extra special. I used mini chocolate chips and I think they work better in this cookie than regular chocolate chips, although you can substitute if you need.
Here’s what you’ll need:
Double Chocolate Coconut Cake Mix Cookies
Ingredients
- 1 box Devil’s food cake mix
- 1 stick butter softened
- 2 eggs I forgot to put these in the photo
- 1 tsp. coconut extract
- 1/3 cup shredded coconut
- 1/2 cup mini chocolate chips
Instructions
- Mix the cake mix, butter, eggs and coconut extract in a mixing bowl.
- Add in the coconut and chocolate chips.
- Drop by teaspoons onto a baking stone or cookie sheet.
- Bake at 350 degrees for 8-10 minutes.

The cookies look real pretty and tasty; however, I’m not a fan of cake mix. Too many ingredients I can’t pronounce.

I agree…That is a beautiful photo. I always have a cake mix in my freezer for “emergencies”…I believe the one that’s in there, now, is Devil’s Food. So I guess I’ll have to invent and emergency and whip these up!

Don’t have coconut extract is it ok to use almond extract.
Absolutely! It will just have a different flavor in addition to the shredded coconut. And now I’m thinking of other extracts to substitute – like a cherry, orange, strawberry, raspberry … I could go on and on here. Let us know how it turns out 🙂
I used to have a chocolate cookie recipe using a cake mix. It was then frosted and dipped in coconut flakes. I lost my copy of the recipe. Does anyone know the one I am referring to. Help me find it
