Tomato Sandwich

Simple, delicious summer in a sandwich.  Who doesn’t love garden fresh tomatoes?  We’ve got several tomato plants growing in our square foot garden.  I’ve been a little disappointed because they haven’t produced as much as I wanted.  I’m not sure if it’s the weather (it’s been a cool, rainy summer) or our gardening abilities or a vile combination of both.  We have managed to get a few tomatoes off the vines and I turned one into a tomato sandwich for lunch.

You’ll need a garden fresh tomato.  If you’re not lucky enough to have your own garden, maybe you’re blessed with a lovely, beautiful friend who gifts you with tomatoes instead of zucchini.  If not, you’ll need to hit a farmers market.  Store-bought tomatoes will not do for a good tomato sandwich.

Slice the maters and lay the slices on paper towels to absorb some of the extra juiciness.  Grab 2 slices of bread.  Spread one side with mayo and sprinkle with salt and pepper.  Add the tomatoes, close the sandwich and take a big bite.  Wash it down with a big gulp of sweet tea.

This is one of my favorite summer lunches. I’m always sad when the home grown tomatoes are gone.

If it makes you feel any better our tomato plants haven’t produced anything this year! We have a few cherry tomatoes but not even a blossom on our regular ones…and I was soooo looking forward to making salsa! :(
The samiches look yummy though!

I’ve gotten some pretty strange comments from friend when I told them I had a tomato sandwich for lunch. But most are converts once they try it! I prefer my bread toasted, you get a bit of a crunch along with the firm juiciness of the tomato! Satisfying and refreshing on a hot summer day!

Your sandwich looks divine. Because there is something wrong with me, I have to throw bacon on it, too. Anyway, our summer has been cool and rainy here, too and we haven’t had our first tomato. Maybe all of our tomatoes will do a late summer rally for us!

I just had one of these today when I visited my parents, they have the best garden with 6 different types of tomato plants; they had so many tomatoes I had to bring some home with me!!!
