
A few years ago we were lucky to get to go to Walt Disney World on their free dining plan. We ate at the Whispering Canyon Cafe in the Wilderness Lodge one day for lunch and ordered Nachos. They were wonderful. Meaty, cheesy, just the right amount of spice. I set about to create a version to make at home and this is what I came up with. Not only are they delish, they are also easy and quick.
Here’s what you’ll need:

1 lb. of ground meat (I had some frozen in a ziplock bag that you see in the photo)
1 can diced tomatoes, drained
1 can tomatoes with green chilis
1 can corn, drained
1 can black beans, rinsed and drained
1 packet of taco seasoning (or equivalent amount)
Brown 1 lb. of ground beef. (I used pork sausage yesterday because I have a freezer full of my nephew’s 4-H project.) Rinse the meat under very hot water to remove the extra grease. Put it back in the skillet and add the other ingredients. Heat all of this together.
Turn on the broiler in your oven. Put a layer of tortilla chips on a baking stone or baking sheet.

With a slotted spoon add the nacho meat ingredients to the top of the chips.

Add cheese and pop them under the broiler until browned up a bit. Watch them close, because it doesn’t take long to brown them. Serve with sour cream and salsa. I usually have some of the meat left over for the next day. I love left overs that are this yummy!
