Just because you want to cook more healthful meals for your family doesn’t mean you can’t enjoy some of the old classics at dinner time.
Sloppy Joes are messy, saucy and so very good. It’s no wonder that everyone loves them! I think of them as a classic, wonderful weeknight dinner. And these sloppy joes are not only healthy, but they have the added twist of lentils.
I love lentils. They are so nutritious and affordable. They make a great companion to sauces and meats. And cooking them in the slow cooker lets everything blend together and makes for some pretty awesome flavors.
You can serve these on a whole grain bun with some cheese if you like. Or if you need a gluten free option, you can skip the bun and serve it in a bowl. I even think it would be amazing in a lettuce wrap!
Serve it with some sweet potato fries or kale chips. Add a nice salad to round it out, and you have a great meal your family will want to enjoy again and again!
