I love recipes that allow for creativity and flexibility. You can tweak and vary and substitute and come up with maybe two or three meals you love instead of just one! This recipe for Pine Nut meatballs and assorted veggies looks like one of those kinds of recipes.
You pick the protein you like, and the veggies you like. Mix it up with your binders, form your meatballs and pop it all together in the crock pot. You can also form this into a loaf instead of balls if you like, and serve it with an endless number of sides. It’s just so easy!

I think grilled veggies would go great with these. You could put it over spaghetti squash with some sort of pasta sauce. Or just eat them as they are. Yum!
