Get the taste of a slow-simmered, diner-style chili in a fraction of the time with Instant Pot Diner Chili.
I grew up going to the local diner every Friday night. One of the menu staples was chili. It was slow-simmered in a big pot all day long, and it always smelled amazing. You could get it by the bowl or poured over pasta, topping off a baked potato, over fries, on a hot dog, or as the base for nachos – and it was amazing.
Instant Pot Diner Chili gives you that same simmered-all-day taste with a considerably smaller time investment. Much smaller, actually – this will be on the table in less than an hour.
Instant Pot Diner Chili
This chili, like any good diner chili, is basic and versatile – you can dress it up or down as much as you’d like. When I serve this in a bowl, I like to top it off with some shredded cheddar and diced onion. It’s also fabulous over baked potatoes – I top them off with cheddar, green onions, and sour cream. Both options are great alongside a big salad.
This is also delicious made in the slow cooker, if you happen to have more free time in the morning thank the evening to prep dinner.
Instant Pot Diner Chili
Ingredients
- 2 lbs. ground beef
- 1 onion, chopped
- 1 clove garlic
- 2 - 6 oz. cans tomato paste
- 6 tomato paste cans of water
- 2 packs low sodium chili seasoning mix
- 1 can fire roasted tomatoes, undrained
- Salt and pepper, to taste
Instructions
- Hit the sauté button and brown the beef, onion and garlic.
- Remove the pressure cooker pot and drain as much grease as possible.
- Add all other ingredients and stir to combine.
- Set the manual cook time for 20 minutes. Do a quick pressure release.
