Instant Pot Chicken and Wild Rice Soup

There are two steps to this soup. First, the broth, rice and vegetables cook in the Instant Pot.  Then you’ll make a quick white sauce on the stove top and mix that into the soup, along with the chicken. The whole thing will take less than an hour – and a vast majority of that time will be hands-off.

This recipe calls for precooked chicken. I generally use leftover chicken, but a store-bought rotisserie chicken is also a quick option.

Or, if you don’t already have precooked chicken ready, you can cook it quickly in the Instant Pot – add the chicken and 1 cup of water or chicken broth to the pressure. Set the manual cook time to eight minutes then do a quick pressure release.

I love to serve this along with some warm, fluffy biscuits, which are perfect for mopping up extra broth, and a big salad.

Instant Pot Chicken and Wild Rice Soup

Prep Time15 minutes
Pressure Cooker Time35 minutes
Servings: 6 - 8 servings

Ingredients

  • 64 oz. chicken broth
  • 1 box Uncle Ben's Wild Rice Blend (you won't use the seasoning packet)
  • 1 onion, chopped
  • 2 stalks celery, chopped
  • 3 Tbsp. butter
  • 3 Tbsp. flour
  • 2 cups milk
  • ¼ tsp. poultry seasoning
  • Salt and pepper
  • 2 cups cooked chicken, chopped or shredded

Instructions

  • Add the broth, rice, onions, and celery to the pressure cooker pot.
  • Set the manual cook time for 35 minutes. 
  • Let the pressure release naturally while you make the white sauce.
  • On the stove top, melt the butter in a saucepan over medium heat.
  • Whisk in the flour and cook for a minute.
  • Gradually mix in the milk. Cook over medium heat until it's bubbly and thickened. Add the poultry seasoning, salt and pepper.
  • Release any remaining pressure in the Instant Pot. Stir in the white sauce. Stir in the chicken.
  • Hit the saute button and cook until heated through. Adjust the seasonings and serve.
