I truly love pumpkin. I’ve been known to eat a whole pumpkin pie by myself. And that pumpkin roll, with the cream cheese swirl? Oh my! I’ve never made one myself because I know how dangerous it could be for me to have it around.
I’ve been looking forward to this spotlight for a while now. My Pinterest board is ready to go and already loading up with recipes. I can’t wait to add yours too.

Love pumpkin. Don’t know why I don’t use it more often. Will be posting a great sub for pumpkin pie soon, though. Today I bring a recipe I posted last year that is probably my favorite pumpkin drop cookie recipe. This one is not too sweet and perfect for after school snacks. I’ve been looking forward to this one for such a long time! I love pumpkin!!! My husband, however, is allergic, so we’ve discovered the joy of using sweet potatoes (which are actually healthier, cheaper and easier to prepare from scratch) than pumpkin. See this post for more details:
