One of my cooking resolutions is to find more meatless/vegetarian recipes for my family. My oldest daughter prefers meatless meals, but my boys are in the “age of meat”. You know, those ages between about 12 and 20 25 when they crave extra protein. (Or maybe they never really grow out of the age of meat.) Whenever I make a vegetarian meal they let me know it would be good, if it had meat.
Consequently, I don’t make lots of vegetarian fare. But every once in a while, it’s a nice change. One place to find (and share) meatless meals is The Greenbacks Gal’s new Meatless Monday link up.

What is it with those boys?! Mine do the same thing when I cook something meatless . . . complain about the lack of meat! They can’t get enough of it and they don’t appreciate how expensive it is.

I’ve been freezer cooking for about 6 months. We are all vegetarians at our house. I don’t have my own blog…or I would link in some recipes! What our family likes: White Bean Chili, Black Bean Soup, Split Pea Soup, Chard & Onion Frittata, Bean & Cheese Enchiladas, Broccoli Stuffed Pasta Shells, Dal. I also convert a variety of chicken based marinade recipes for use with a chicken substitute called “Quorn”. Plus I do variety of side dishes from Lemon Rice PIlaf, Indian Rice Pilaf, to twice baked potatoes stuffed with cheese and broccoli. And my favorite lunch: big vegetarian burritos! I love trying new recipes!
