Veggie Chowder Dinner into Lunch

 

I’m going to be talking about 3 of my favorite things in this post.  Soup.  Sweet potatoes.  And slow cookers.

Make that 4 of my favorite things – how could I forget easy dinners!  When Libby’s asked me to create an easy dinner recipe that cold be repurposed into lunch, I was in.  Our lunches almost always consist of leftovers.  Why cook twice, when you can do it once and have a second meal out of the deal?

This Veggie Chowder comes together really quick.  The other thing I like about it, is that it’s a pantry meal.  You can keep all of these things on hand, so you have the fixings for a fast dinner any time.

Soup is an economical way to feed a crowd.

Hot bowls of Veggie Chowder make a satisfying dinner when you pair it with cornbread and salad.  Don’t worry if you don’t have too many leftovers.  You only need a ladle full to spoon over a baked sweet potato for lunch the next day.

Veggie Chowder – Dinner into Lunch

Servings: 6 -8 servings

Ingredients

  • 4 Tbs. butter
  • 1 small onion diced
  • 4 Tbs. flour
  • 3 15 oz cans chicken broth
  • 2 15 oz cans Libby's sliced potatoes
  • 1 15 oz can Libby's mixed vegetables
  • 1 15 oz can Libby's peas and carrots
  • 1 15 oz can Libby's corn
  • 2 cups milk warmed
  • 1/2 tsp. thyme
  • 1 bay leaf
  • salt and pepper to taste

Instructions

  • Cook onion in butter over medium heat until onion is soft.
  • Whisk in flour. Cook for 1 minute.
  • Whisk in broth.
  • Drain veggies and add to soup.
  • Add thyme and bay leaf.
  • Stir in milk and heat over medium heat, being careful not to boil
  • Serve big bowls of hot soup for dinner and over baked sweet potatoes for lunch the next day.

  1. My favorite easy dinner that I repurpose the next day is any type of grilled chicken or steak. You can slice it and put it on top of a salad or stir fry it with veggies! Yum!

  2. I like to cook chicken breast in the crock pot for tacos and then I use leftovers to make chicken salad sandwiches. Yum!

  3. This looks delicious! I love soup and I’m always looking for new recipes but I’ve never tried a veggie chowder. Leftovers over the sweet potato look yummy too! Thanks for the great ideas!

  4. My favorite slow-cooker dinner that I repurpose is bbq- whether it’s chicken, beef or pork. We’ll eat sandwiches the first night, then eat the leftovers as a topping for baked potatoes (that I also cook in the slow cooker!), nachos, quesadillas, whatever we can think of!

  7. Love making chili in the slow cooker. Super easy and makes a lot of chili for our family. We’ll have bowls of it with shredded cheese and cornbread the first night, then warm it up for chili dogs the next night. YUM!!

  8. we always have leftovers of “quick sauce” which is always nice
    but also ive made a pork roast in the crockpot with just seasonings no gravy and had that one night then the next night or night after made “pork ragu” which is the pork chopped up with some onions mushrooms and jars of our favorite pasta sauce.
    also roast. i have made a delish pot roast mushroom soup out of leftover roast. i can not wait to make one again!

  9. We grill chicken and vegetables on the grill for fajitas which are served with Mexican Rice and then turn the leftovers into Fajita Soup with the addition of some chicken stock, salsa, and pinto beans. It’s so delicious we purposely make more fajita filling so we can make the soup. 🙂

  10. I love my slow cooker – use it several times a week for beans, rice, and soups. I always make extra to stock the freezer. I have upcoming knee replacement surgery so these will come in handy.

  11. My favorite to eat over & over multiple ways is Pork BBQ. Slow cooked pork loin with a can of coke or root beer, mostly drained than add a bottle of BBQ and use my salad choppers to shred it (Pampered Chef). then I serve as sandwiches one night, over nachos another, in a stuffed baked potato the next night! YUM!

  12. I hadn’t even thought of veggie chowder! This looks super easy and especially delicious! I use a slow cooker all the time! 6 kids means we have about 6 million things to get done in the afternoons and slow cookers allow me to do then and have a yummy dinner with my family! I’d love to win this awesome one!!

    1. My favorite dinner repurposed is probably chili! It’s great as a main for dinner and over potatoes or to make a frito chili pie for lunch the next day!

  13. I use my slow cooker all the time! With our busy schedule, it helps me stick to a menu plan and eating at home. 🙂

  14. Pretty much everything I make in the crock pot doubles as leftovers. I love pot roast in the crockpot turned into Shepherds Pie for leftovers.

  15. What a beautiful, high-end crockpot! I am a huge Kitchen aide appliance fan. I would have this crockpot going nearly 24 hours a day with roasts or soup. Yummmmm!!!!!!

    1. I love to repurpose cooked shredded chicken from my crock pot into chicken tacos, or pulled chicken sammies, chicken pot pie!

    2. I love to repurpose cooked chicken breast from my slow cooker, shredded for tacos, chicken pot pie, pulled chicken sammies….and so much more!

  19. I Love making a Beef Roast, or else Chicken and using it during the week for numerous meals!!! I could use this Kitchen Aid slow cooker, as I need a new one!!! My slow cooker is almost on its last leg. LOL!
    It is from the 70’s!!! The metal body of the unit, is trying to fall apart!!! I Love it though, and will keep it as long as it keeps working even if I were lucky enough to win a new one. That way the old one could be used at work!!!! 🙂

  20. Many things work great as leftovers the next day, but I love meatloaf… meatloaf sandwiches the next day are wonderful! 🙂

  21. Baked ziti – I have to make a double batch for the two of us whenever I make it because my husband can’t get enough leftovers!

  22. I cook up a big crock pot full of southwest chicken chili. We reuse it fro tacos, casseroles, and I will make freezer burritos for later quick on the go dinners.

  23. roast chicken and then i make an awesome buffalo chicken salad the next day for hubby to take to work and me to hide in the closet and eat while the kids sleep haha!

  24. When I make a roast with potatoes in my slow cooker, my husband likes the meat shredded for his sandwich the next day at lunch. It is so tender and he usually puts barbecue sauce on it. I like my homemade soups for lunch the next day! Love that KitchenAid slow cooker!! Love to win, I would use it all the time. Digital would be such a great upgrade!!!!

  25. One of my favorite easy dinner ingredients is chicken. I love it grilled, baked, slow cooked, really any way except fried. I love using the left overs the next day in my salads. Since I always eat a large salad for lunch, using up the left over chicken is a breeze, adds protein, and is very tasty!

  26. I am so ready for soups again. One of my favorite leftover makeovers is pulled pork. Slow-Roast a wonderfully seasoned pork loin (I make my own spice mix that includes “sweet” spices). The next day I use about half of the leftovers (setting aside the other half for another meal of pork medallions). Then I slow-cook the meat until it is fully heated and just beginning to fall apart. Pull using 2 forks, add whatever homemade barbecue sauce is in the fridge and mound it all onto potato rolls! Yum!

  27. When we have leftover taco meat from taco night, we often repurpose it for lunch the next day as a taco salad topper, nachos, or quesadillas but one of my favorites things to do with it is mix it into scrambled eggs (for breakfast or lunch).

  28. Neither of my kids like sandwiches or school lunches, so we do a lot of dinner repurposed into lunch meals. One of our favorites is boston butt (in the crockpot), repurposed into barbecue pulled pork stuffed baked potatoes. thanks for the great giveaway. 10750coupons at gmail

  29. A lovely, big pork roast dry-rubbed with fennel, rosemary, and oregano….repurposed with BBQ sauce…or chopped and tossed with shredded carrots, water chestnuts, cilantro. basil for Thai rollups in lettuce or rice paper wrappers and a yummy fish sauce with lime juice for dipping!
