Normally, I’d grab several boxes of Jello from my pantry to take a photo for Ingredient Spotlight, but wouldn’t you know I was all out?  I’m also short on daylight.  The sunshine we had for a few days is gone again, replaced by gray rain.  Again.

The good news is that all this rain has made our grass green.  And I got to munch the first ripe strawberry from our garden last night.  Yum!

I am ready for sunny, warm summertime.  Jello recipes are perfect for summer, because so many of them are light, fruity and cool.  Here are a few of my favorites:
