My ears perked up when I heard someone mention a fried rice dish that involved ham and pineapple.  Any recipe that involves cubed ham gets my attention right now, since I have so much in the freezer.

My family likes the ham/pineapple combo in recipes, but I admit that this sounded a little strange.  But I was wrong.  The fried rice was full of flavor and we licked the platter clean.  No leftovers to fight over.

I based the recipe on Vietnam Fried Rice, but I used pineapple juice in addition to the soy sauce to season and flavor the dish.  Here’s what you’ll need:

Ham and Pineapple Fried Rice

Ingredients

  • 2 cups white rice
  • 1 onion chopped
  • 3 garlic cloves minced or crushed
  • vegetable oil
  • 2 cups diced ham
  • 2 Tbs. soy sauce plus extra to taste
  • 20 oz can pineapple tidbits drained and reserve juice
  • 2 eggs beaten
  • 1-2 cups frozen peas and carrots
  • salt and pepper to taste

Instructions

  • Cook the rice according to the package directions.
  • Cook the onion and garlic in oil in a large skillet till soft.
  • Add the ham, 2 Tbs. soy sauce, 1 Tbs. pineapple juice.
  • Cook for several minutes till the ham is hot.
  • Pour the eggs into the skillet and cook, stirring frequently.
  • Add the peas and carrots and heat through.
  • Stir in the drained pineapple.
  • Add the cooked rice, stirring to combine.
  • Add soy sauce, pineapple juice, salt and pepper to taste. I added about 2 Tbs. each of soy sauce and pineapple juice.

  1. This sounds really good but what kind of ham did you use? Do you just buy a bunch of ham from the grocery deli or do you buy the thick sliced ham from meat counter???

    1. Kathy, I used ham that was from 1/2 hog we bought from my sister. But you could get some boneless ham and dice it or I know at Walmart you can buy ham already diced in the meat department.

  2. Sounds yummy! And great timing, too, because I have some cubed ham in my freezer waiting to be used up. I put this on my menu rotation for the remainder of the month.

  3. Would this recipe work good with brown or jasmine rice? I don’t buy plain white rice anymore. I’d like to take you up on your suggestion and prepare it for my freezer meals!

    1. Jessica, this would work fine with either brown or jasmine rice. I use jasmine. I don’t think this one will do well in the freezer though. You could cube the ham though and have it ready to go.

  4. This looks amazing! I recently found a recipe in a cookbook for Ham/Pineapple Pizza Casserole. It basically included pasta sauce, ham, pineapple & mozzarella mixed with pasta and baked to heat through and it was really good. With this recipe now, I can’t wait ’til Easter to stock up on diced ham again 🙂
