Cornbread Pizza

My friend, the Invisible Woman gave me the idea for this recipe.  I’ll explain at the end of the post why I call her the Invisible Woman.

She said she made a cornbread crust and layered on sliced tomatoes and other veggies.  Unfortunately, I didn’t have any tomatoes the night I decided to make this.  I still want to try the veggie version, because I think it will be grand.  Especially with garden fresh tomatoes.

This version is a fast way to make homemade pizza.  It made the kids happy too.

Here’s what you’ll need:

  • 1 1/2 cups cornmeal
  • 3/4 cup flour
  • heaping tablespoon baking powder
  • 1/2 tsp. salt
  • 1 egg
  • 3/4 cup milk
  • 1 lb. sausage
  • 1/2 onion, diced
  • 1 jar pizza sauce
  • 2 cups shredded mozzarella cheese

Brown the sausage and onion together in a skillet.  Drain and rinse under hot water to remove the extra grease.

Mix the dry ingredients together for the cornbread.  Stir in the egg and milk.  Spray a 9×13 casserole dish with cooking spray.  Spread the cornbread batter in the dish.

Bake at 375 degrees for 5 minutes.  Pull it out of the oven and spread with the sauce, sausage and cheese.  Bake another 15-20 minutes or until the crust is done.

Now for the Invisible Woman – she and I met online in the Sonlight forums several years ago.  We live in the same town and know a lot of the same people, but we didn’t meet in person until this past May.  And that’s the only time we’ve ever seen each other in person!

I’ve met several online friends in person.  My oldest daughter has had several online friends come stay with us for a few days and she’s gone to visit them. What about you? Have you met any online friends in real life?

  2. This cornbread pizza sounds really good. I haven’t gotten cornmeal but I think it was because of the sugar content or cholesterol or something but I will double check in a couple weeks next trip to the store and look at labels and see if there is a cornmeal that I could use.

    Question: Was it easy to take the cornbread out after 5 minutes and spread the sauce and other ingredients???

    I made this tonight and liked it. My only hitch was that the crust turned out a bit crumbly, so it wasn’t so easy to eat with your hands like regular pizza. Also, I added 1 tsp garlic powder into the crust ingredients–gave it a nice flavor! Thanks for the inventive idea!
